Damian Mogavero (MBA 1996) was a frustrated restaurateur. The MBA grad wanted to answer simple business questions such as "Why did food costs go up?" but he was greeted, he tells Bloomberg Pursuits, with “blank stares and wrong answers.”
His frustration led to the 1999 founding of Avero, a software company that helps restaurants collect and analysis data to better understand their businesses, and, this month, a new book, The Underground Culinary Tour: How the New Metrics of Today’s Top Restaurants Are Transforming How America Eats.
“It's an incredible time to be a foodie,” Mogavero says. “It also makes it a dangerous time to be a restaurateur.” The danger is the diners’ high expectations amid ever-increasing competition for their dollars. “More than ever, technology must play a critical role in helping a restaurateur optimize their operations.”
